Pecan Pie
Homemade pastry filled with pecan nuts and a golden-syrup filling.

Ingredients

Method
- Rub the butter into the flour, sugar and salt until the mixture resembles breadcrumbs.
- Add the vanilla essence and egg, and bring together to form a dough. Alternatively, make the dough in a food processor.
- Wrap the dough and refrigerate for 30 minutes.
- Preheat the oven to 180°C and grease two 20 cm pie dishes.
- Divide the pastry evenly, roll it out and line the two dishes. Prick the bases with a fork.
- For the filling, melt the butter and sugar in a saucepan. Add the golden syrup and allow the mixture to bubble gently until the sugar has dissolved.
- Stir in the lemon juice and salt, then remove from the heat and cool.
- Gradually mix in the beaten eggs.
- Divide the pecan nuts between the pastry cases, then pour the filling evenly over them.
- Bake for 30–35 minutes, until the edges are set and the centres have only a slight wobble.
- Allow the pies to cool before slicing.
