Pecan Pie

Homemade pastry filled with pecan nuts and a golden-syrup filling.

Ingredients

Method

  1. Rub the butter into the flour, sugar and salt until the mixture resembles breadcrumbs.
  2. Add the vanilla essence and egg, and bring together to form a dough. Alternatively, make the dough in a food processor.
  3. Wrap the dough and refrigerate for 30 minutes.
  4. Preheat the oven to 180°C and grease two 20 cm pie dishes.
  5. Divide the pastry evenly, roll it out and line the two dishes. Prick the bases with a fork.
  6. For the filling, melt the butter and sugar in a saucepan. Add the golden syrup and allow the mixture to bubble gently until the sugar has dissolved.
  7. Stir in the lemon juice and salt, then remove from the heat and cool.
  8. Gradually mix in the beaten eggs.
  9. Divide the pecan nuts between the pastry cases, then pour the filling evenly over them.
  10. Bake for 30–35 minutes, until the edges are set and the centres have only a slight wobble.
  11. Allow the pies to cool before slicing.
