Mince Flan

A savoury mince-filled pastry flan topped with sour cream, egg and cheese.

Method

  1. Rub the butter into the flour until the mixture resembles breadcrumbs. Add the lemon juice and water and mix to a soft dough, adding only a little extra water if required.
  2. Roll out the dough and line a 23 cm deep flan tin. Cover it with baking paper, fill with baking beans and bake at 220°C for 10 minutes. Remove the paper and beans and bake for another 5 minutes.
  3. Melt the margarine and sauté the onion until tender. Add the mince and cook until browned and at least 71°C.
  4. Stir in the soup powder, oregano, tomato paste and water. Bring to the boil, then simmer uncovered for approximately 10 minutes, until thickened.
  5. Spread the mince mixture in the pastry shell.
  6. Beat the sour cream and eggs together and pour over the filling. Top with the grated cheese.
  7. Bake at 180°C for 35 minutes, until set and golden. Serve with a fresh salad if desired.
